| | satisfied | ] | Yeah, I know I mostly only post recipes on here lately, cooking is what brings me joy these days. I'm not dating anybody, so there's very little drama, lol!
So, since I like to share good stuff with my friends, here's another thing I cooked up. It is REALLY quick and easy!
Creole spiced couscous with scallops and veggies
Well, first off, I made some vegetable stock with some veggie scraps I had thrown in the freezer. Just save the bits you cut off veggies and boil them for 20 minutes, then strain. You can use chicken stock if you like too, fresh or canned, or water -- whatever you have available. If you're in a hurry or are unable to take the time to make fresh, use canned broth, it will turn out fine. I ended up with about 2 cups of stock.
So, I took some onion and cooked it a bit in a small amount of olive oil to carmelize it, and added some chopped and seeded hot Hungarian peppers I grew and some chopped celery. Then I added the veggie stock. I then added some chopped homegrown roma tomatoes, and some frozen corn and broccoli. I added some frozen scallops, and some Tony Chachere's Creole seasoning. I added a bit of toasted sesame seeds too. You can really use any veggies you have, this is just what I had on hand.
I brought the mixture back to a boil, and let it boil until the scallops were cooked. I then added a cup of dried couscous, turned off the heat, and covered it. I let it sit covered for 10 minutes, then fluffed it with a fork.

| | Laibach - Final Countdown (Juno Reactor Remix) | ] | STIR FRY chicken (I used the meat from boiled chicken leg quarters used to make stock, separated from the skin and bone) beef or lamb (I used beef shank steak, cut thinly into bite sized pieces) Put garlic powder on the pieces and let it sit in the fridge a while. scallops (frozen) shrimp (frozen, precooked) fake crab firm tofu (cut into bite sized pieces 1/4 inch thick) Put garlic powder on the pieces and let them sit in the fridge a while. Note: all veggies and spices are fresh. broccoli red pepper green pepper garlic onion cabbage, sliced into strips cilantro sesame seeds celery, cut into 1/2 inch pieces whole mushrooms green onion, cut into 1/4 inch pieces with scissors bean sprouts 1 inch peeled grated ginger root carrot, sliced diagonally 1mm thick
Fry in a mixture of olive and sesame oil I fried the meat first, each type individually, starting with the beef. The chicken doesn't need to be fried because you already cooked it when you made the stock. I kept the cooked meat warm in an improvised double boiler (stainless steel bowl on top of a pot of boiling water) Then I fried the tofu until it got browned and put it with the meat. Next came the carrots, then the cabbage. The onions, peppers, celery, and broccoli were added next. After that, I added all the other ingredients. Once the veggies were done to my liking, I added the meat to the stir fry and let it cook a couple minutes. I added the sauce, and let it cook a bit more, then it was ready to eat!
SAUCE 1 cup homemade chicken stock (boil chicken leg quarters with salt, onion, and garlic, skim off the fat to fry latkes sometime) molasses honey ground cayenne pepper turmeric garam masala 1/4 cup Squid brand fish sauce 1/4 cup soy sauce a few shakes of balsamic vinegar a palmful of raw sugar
Boil and stir it until it is reduced a little bit Taste it and adjust as necessary DO NOT ADD SALT! The fish sauce and soy sauce has plenty in it. Next time I think I'm going to use low sodium soy sauce.

| | NPR news | ] | Wow, I didn't think I could make my breaded eggplant any better than I already did, but I managed to, by accident. I was a klutz and dumped too much sesame seed into my breading bowl, so the eggplant slices were breaded almost entirely with sesame seeds (plus a bit of homemade bread crumbs and spices). I fried them in olive oil. Amazingly delicious! |

| | cheerful | ] | OK, here's another recipe for you. I like to share delicious things with my friends. :) So, I made some homemade chicken salad last weekend, and it was amazingly awesome, with a side of awesomeness.
I boiled 2 chicken leg quarters with salt, garlic powder, and onion powder for what I imagine was about 20 - 30 minutes. I dunno, I just boiled the heck out of them until they were well cooked and tender. I removed them from the broth, which I reserved for other purposes, and let them cool and drain. I cut off the meat, and put the skin and bones into the freezer for the next time I need chicken stock. Chopped up the meat, chopped up some celery, chopped up an apple, chopped up some pecans. I mixed them all together with some equivalent of "Miracle Whip", and added dill.
Simple, and yet totally Fantastic!!! |

A bottle of lye solution that I was using for scientific testing purposes (mostly for testing beer and wine chemistry) shattered and I got it all over my hands and they're really dry now. Guess I oughtta be productive, if nothing else. I think I'll clean, or maybe shovel snow, until I get tired again. Knowing me, that may not come tonight. At least no one is getting angry and nagging me that I should be sleeping.
I REALLY need to find a career that is conducive to my odd sleep patterns. |
