[mood | satisfied]

Yeah, I know I mostly only post recipes on here lately, cooking is what brings me joy these days. I'm not dating anybody, so there's very little drama, lol!

So, since I like to share good stuff with my friends, here's another thing I cooked up.
It is REALLY quick and easy!

Creole spiced couscous with scallops and veggies

Well, first off, I made some vegetable stock with some veggie scraps I had thrown in the freezer.
Just save the bits you cut off veggies and boil them for 20 minutes, then strain.
You can use chicken stock if you like too, fresh or canned, or water -- whatever you have available. If you're in a hurry or are unable to take the time to make fresh, use canned broth, it will turn out fine.
I ended up with about 2 cups of stock.

So, I took some onion and cooked it a bit in a small amount of olive oil to carmelize it, and added some chopped and seeded hot Hungarian peppers I grew and some chopped celery. Then I added the veggie stock.
I then added some chopped homegrown roma tomatoes, and some frozen corn and broccoli.
I added some frozen scallops, and some Tony Chachere's Creole seasoning. I added a bit of toasted sesame seeds too. You can really use any veggies you have, this is just what I had on hand.

I brought the mixture back to a boil, and let it boil until the scallops were cooked.
I then added a cup of dried couscous, turned off the heat, and covered it.
I let it sit covered for 10 minutes, then fluffed it with a fork.

Delicious!

A bunch of people who I went to high school with have been friending me lately on FB.
This afternoon, I got a friend request from a bully who used to pick on me incessantly.
I am most amused. But, 20 years have passed, and it was he who asked to be friends, so maybe he has changed. What the heck, I might as well friend him. I'll forgive, but I'll never forget, though.

Tom has been using Facebook so much that he finds it hard not to write about himself in third person. He finds it interesting that 3 women who he barely knew but went to high school with have recently friended him on FB. He had to look at his high school year book to figure out who they are, LOL!

Stir Fry of the gods [Apr. 27th, 2009|01:22 pm]
[mood | busy]
[music |Laibach - Final Countdown (Juno Reactor Remix)]

STIR FRY
chicken (I used the meat from boiled chicken leg quarters used to make stock, separated from the skin and bone)
beef or lamb (I used beef shank steak, cut thinly into bite sized pieces) Put garlic powder on the pieces and let it sit in the fridge a while.
scallops (frozen)
shrimp (frozen, precooked)
fake crab
firm tofu (cut into bite sized pieces 1/4 inch thick) Put garlic powder on the pieces and let them sit in the fridge a while.
Note: all veggies and spices are fresh.
broccoli
red pepper
green pepper
garlic
onion
cabbage, sliced into strips
cilantro
sesame seeds
celery, cut into 1/2 inch pieces
whole mushrooms
green onion, cut into 1/4 inch pieces with scissors
bean sprouts
1 inch peeled grated ginger root
carrot, sliced diagonally 1mm thick

Fry in a mixture of olive and sesame oil
I fried the meat first, each type individually, starting with the beef.
The chicken doesn't need to be fried because you already cooked it when you made the stock.
I kept the cooked meat warm in an improvised double boiler (stainless steel bowl on top of a pot of boiling water)
Then I fried the tofu until it got browned and put it with the meat.
Next came the carrots, then the cabbage.
The onions, peppers, celery, and broccoli were added next.
After that, I added all the other ingredients.
Once the veggies were done to my liking, I added the meat to the stir fry and let it cook a couple minutes.
I added the sauce, and let it cook a bit more, then it was ready to eat!

SAUCE
1 cup homemade chicken stock (boil chicken leg quarters with salt, onion, and garlic, skim off the fat to fry latkes sometime)
molasses
honey
ground cayenne pepper
turmeric
garam masala
1/4 cup Squid brand fish sauce
1/4 cup soy sauce
a few shakes of balsamic vinegar
a palmful of raw sugar

Boil and stir it until it is reduced a little bit
Taste it and adjust as necessary
DO NOT ADD SALT! The fish sauce and soy sauce has plenty in it. Next time I think I'm going to use low sodium soy sauce.

If anyone cares to join me tonight at the Spitfire, I shall be attending the show of the amazing Rocka-psycho-billy group Vegas 66, who hail from Columbus. (Thanks for turning me on to them Amy!) I would be delighted to see some friends there. :) It is gonna be a great time!

Wow, I didn't think I could make my breaded eggplant any better than I already did, but I managed to, by accident. I was a klutz and dumped too much sesame seed into my breading bowl, so the eggplant slices were breaded almost entirely with sesame seeds (plus a bit of homemade bread crumbs and spices). I fried them in olive oil. Amazingly delicious!

OK, here's another recipe for you. I like to share delicious things with my friends. :)
So, I made some homemade chicken salad last weekend, and it was amazingly awesome, with a side of awesomeness.

I boiled 2 chicken leg quarters with salt, garlic powder, and onion powder for what I imagine was about 20 - 30 minutes. I dunno, I just boiled the heck out of them until they were well cooked and tender.
I removed them from the broth, which I reserved for other purposes, and let them cool and drain.
I cut off the meat, and put the skin and bones into the freezer for the next time I need chicken stock.
Chopped up the meat, chopped up some celery, chopped up an apple, chopped up some pecans.
I mixed them all together with some equivalent of "Miracle Whip", and added dill.

Simple, and yet totally Fantastic!!!

After calming down a bit, I realized that the Cleveland cops wouldn't come out for something like a broken window anyway. I'll just file a report on Monday. I found the plastic, and I found some clear Scotch packing tape, which should work just as well, I hope.

I'm still really frustrated, though. This is not what I wanted to be doing right now.

[music |Dr. Horrible's Sing-Along-Blog]

Oh my gods, I didn't think Joss Whedon could make anything better than Firefly / Serenity, until I saw this... http://www.hulu.com/watch/28343/dr-horribles-sing-along-blog , also at http://www.drhorrible.com/ .
After the first 20 minutes, being a mad scientist and all, I quite identify with Dr. Horrible, he's just a misunderstood geek, in my opinion.

Holy smokes, this is amazingly awesome stuff! Plus it has funny show-tune style music in it which appeals to the drama geek in me. It reminds me of Sweeney Todd meets Firefly, actually.

You must check it out!!! It is hilarious!!!

Holy smokes, Tom has done two memes in one day! [Feb. 12th, 2009|09:59 pm]
[mood | silly]

Just a bit of silliness, since I'm decompressing from months of pent-up anxiety.
These answers don't necessarily fit me accurately, but I've got a limited number of song titles to choose from. A few are totally accurate, though.

Meme yanked from my buddy [info]badspock

Using only songs from one artist cleverly, answer these questions.

Pick a band: Cowboy Junkies

1. Are you a male or female?
If You Were The Woman And I Was The Man

2. Describe yourself.
I'm So Open

3. How do you feel about yourself?
Now I know

4. Describe your ex boyfriend/girlfriend.
Something more besides you

5. Describe your current boy/girl situation.
Just want to see

6. Describe your current location.
200 More Miles

7. Describe where you want to be.
Dreaming My Dreams with You (*only one of you all, however*)

8. Your best friend is...
Someone Out There

9. Your favorite color is...
Mining For Gold (*actually I hate gold, that was the only title that had a color in it.*)

10. What's the weather like?
Winter's Song

11. If your life was a television show, what would it be called?
Speaking confidentially

12. What is life to you?
Sun Comes Up, It's Tuesday Morning

13. What is the best advice you have to give?
You Will Be Loved Again

14. If you could change your name, what would you change it to?
Hot Burrito No. 1

No tags, just do it if you want to!

Dear interwebs,
What is the best readily available hand moisturizer that you know of?
A bottle of lye solution that I was using for scientific testing purposes (mostly for testing beer and wine chemistry) shattered and I got it all over my hands and they're really dry now. I've never needed any moisturizer before so I have no clue.

I appreciate your advice!
Thanks!

I am currently practicing an exercise in delayed gratification. I really want to be at the Combichrist show tonight, or the Sweeney Todd show, but chose not to because I've got a longer-term goal and need to save the large amount of money that I know I would spend. Wow, that's a new behavior for me! Well, at least this century.

Avoiding large crowds this weekend will also probably prevent me from catching the zombie plague that is ravaging Ohio.

AAAAHHHHGH! HEAD EXPLODY!
Thank the gods I went out and bought some pseudoephedrine the other day.

Stayed up late having a nice conversation, that probably helped me sleep so late, lol!

So.

I woke up feeling totally refreshed, wide awake, thinking it was maybe 5 or 6 in the morning.
Then I realized it was midnight.

O_O

Guess I oughtta be productive, if nothing else. I think I'll clean, or maybe shovel snow, until I get tired again. Knowing me, that may not come tonight. At least no one is getting angry and nagging me that I should be sleeping.

I REALLY need to find a career that is conducive to my odd sleep patterns.
